There always seems to be leftover rice whenever I make white it for stir fry's and curry.
This is the recipe I end up making, ham (or spam) fried rice!
Ingredients:
Oil for cooking
Leftover rice
Ham (or spam)- diced
2 Eggs
Frozen peas, carrots and corn- about 2/3
Green onion- 1 stalk chopped
Light Sauce sauce
Knorr chicken boullion flavor
Sesame oil
Heat large pan or wok.
Lightly beat eggs and cook to a soft scramble.
Remove from pan.
Add a little oil to the pan and cook ham.
When ham gets a golden crust, add frozen veggies and stir.
Add Leftover rice, soy sauce, boullion and a drizzle of sesame oil.
Stir until well combined and sauce is evenly coated throughout.
Let rice heat through, stirring occasionally.
Stir in cooked eggs, garnish with green onion and serve.
