Purple Congee


'Black Glutinous' rice, is known in my family as 'purple rice' because even though it appears to be the color black at first glance, it is actually more of a dark purple. 

This is confirmed when boiled in water and coconut milk is added, you get a pretty purple color. 

Congee is basically a rice porridge made to be of sweet or savory variety.

The version we ate growing was sweet and deliciously comforting.


It is made from these four simple ingredients:

-Black Rice

-Water

-Coconut milk 

-Palm sugar

Wash rice and place in pot with twice and much water.

Boil until it starts to soften, stirring occasionally (Add more water if needed)

Lower heat

Add sugar and continue to simmer until sugar dissolves

Add coconut milk and mix well and remove from heat.

Serve warm.
